After August, autumn salmon returned to Hokkaido's rivers to spawn.
The Tokishirazu is used by salmon migrating up Russian rivers when they pass through Japanese territorial waters.
It is caught between May and July.
Because it arrives earlier than autumn salmon, it is called "Toki Shirazu," a salmon that has arrived at the wrong time.

We marinate the fish for three days with salt, herbs, and spices, then freeze it overnight (to prevent parasites).
